Now there will be a review in English! What a lovely lunch at Saisons the teaching restaurant for the Institut. Staff was gracious and welcoming in French and some English; their English was better than my French! Each course was delicious and served with beautiful presentation. It was fun to watch the wait dance, each head waiter had an assistant, seeming to be a newer student they were instructing. The students take turns both in kitchen and front of house as I understand. Be sure to peek in the kitchen window, preferably before clean up time when I went. It is an incredible place! I enjoyed all my courses but my favorite was the amuse bouche. Asparagus mousse with bits of shrimp and crab, so delicious it deserves to be a course in its own right some time. Bon Appetit!!
