This is probably Waterloo's best kept secret and we've all spent way too much already on lunches at DG's. DG's is a small sandwich shop on Alaska Street. You can find it by coming out of Waterloo Station, turn left and walk straight until you get to Alaksa Street and then turn right, you can not miss it. There is normally a queue at lunch time.
The shop is quite small, you can fit about seven people in there and it will be a tight squeeze. There are three ladies serving hungry people and they do tend to go quite fast. You basically pick and choose what you want and how you want it.
The prices are above reasonable for a custom made sandwich, try the baps when you are there but I must warn you, you should be hungry if you are going to be that brave. Unfortunately they only accept cash as they'll probably get a lot more clients if they chose to switch to debit / credit cards.
They tend to shut just after lunch and they normally have sold out everything they made for that day, or pre-made stuff. So go early and enjoy!
